Fire and Blood, by George R R Martin. Being a fan of ASOIAF from back in the day and having mostly enjoyed the first three seasons of House of the Dragon I figured I'd give the source material a go.
It's basically good, but the main problem with dragons in Martin's world is that they're so overpowered that they basically ruin any storyline they come into contact with. The only thing that actually makes the civil war that HOTD adapts work is that both sides have them. Aegon's conquest, for instance, basically felt like one case after another of "Lord such-and-such all his nobles gathered the greatest host anyone had ever seen and marched against Aegon who promptly burned them all with his dragons until they surrendered".
