I suspect that it is not so much "processing" (why would blending up pork scraps and extruding them into a sausage shape change the nutrition) but specifically preservatives which are bad over time. Money is not the issue. Cost disease and institutional inertia is. You're right it's a catastrophic indictment, but it's not one that can be fixed by allocating more spending or putting out large quantity bids. I've also greatly improved waking by buying a couple of color changing LED bulbs for my bedroom lamps, which Alexa is programmed to gradually color shift people to my wakeup time, starting with deep blue and getting increasingly white over about 45 minutes. As a bonus, I can make the light brown in the evening before bed.
